So I am wondering if cowboys were known to learn native American languages or did they simply expect the natives to pick up English, or do we even know?

There had to have been translators of the different native american tribes especially in the U.s. government, seeing that the government started to move most of them(the native americans). There is no way a body of people could forcefully move another group of people without having some lower echelon communication.
if the government can do it why not "cowboys" right?
i think you are asking if the english speaking peoples were so arrogant that they wouldnt conform to the native Americans the same way those same english speakers wanted the native americans to conform, into the english language.
and finally records of the frontier are sketchy at best outside major populated areas, which there were few.
